The Deba is Japan's dedicated fish and poultry knife - thick-spined and single-bevelled for breaking down whole fish, jointing poultry, and separating meat from bone with precision and minimal waste. This set of three spans 100-150mm, covering the full range of Deba work from large fish down to fine detail cuts. Carbon steel at 58 HRC sharpens to a finer, keener edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing to prevent rust
  • Apply a light coat of food-safe mineral oil to the blades if storing long-term
  • Sharpen on the flat (bevel) side only - single-bevel geometry requires whetstone sharpening
  • A natural patina will develop with use - this is normal and desirable
